While some books I’ve read recently get a bit overly ambitious (the use of herbs and hard-to-find ingredients) this book is perfect for anyone who just wants straight fruit and vegetable juices. There is a chapter on ailments but it is not overly complex and just gives information on which juice recipes work best for which ailment.

Some of the ailments include acne, anxiety, colds, digestion problems, flu, headaches, fatigue, insomnia, muscle cramping, sunburn, weakened immune system, arthritis, diabetes, heart disease and osteoporosis.

There is an interesting section on growing your own wheatgrass and a chapter on why fruits and vegetables are so good for you. Since I love using lemons in juice blends I was please to read that lemons are a rich source of bioflavonoids and that they help the body to detoxify.

Some of the recipes include:

Apricot Ambrosia – apricots, grapes and pears
The Key Wester – grapefruit, pineapple, apple and lime
Pacific Prize – carrots, cauliflower and bok choy
Zippy Spring Tonic – pineapple, radishes and dandelion greens

Most of the recipes contain two to five ingredients at the most. Most of the ingredients are available at your local grocery store. I noticed that in almost every recipes there are carrots so your skin and hair will look terrific after drinking these juices.

Jay Kordich says he drinks four glasses of vegetable juice and two glasses of fruit juice per day. This must mean his grocery bill is rather high. While juicing is fun it is also fairly expensive. Don’t be surprised if your grocery bill is much higher than it was when you didn’t juice. It is worth the price and you will feel much healthier – not to mention you will have fewer doctors’ bills in the future.

In this book, Salatin describes scenarios involving superfluous regulation that are outrageous in the extreme, such as how his son was forced to a build a house that was twice the size that he wanted. Though the stories are varied, the general point that emerges is that government regulations concerning food address the process of production, not the product. Though aimed at ensuring food safety, they regulate types of walls and amenities for resident inspectors, without requiring testing for microbes or other contamination. By requiring specific types of constructions for food processing, they prevent market access to small producers who cannot afford to buy the large buildings required, despite the fact that the small producers’ products may be as clean as, or likely cleaner than, the products coming from the large buildings that meet government regulations. If government regulations were to focus entirely on the safety of the product, not the specifics of production, the exact same regulations could be applied to all producers, regardless of size, without restricting market access to small producers and new entrants. However, industrial producers would not want this because their products, coming from overcrowded feedlots and slaughter houses staffed by poorly trained immigrants, would be more likely to fail inspections for product contamination. Since the industrial producers own the politicians who ultimately control the regulations, no end is in sight.

Overall, the book is quite interesting, and points out some amazing challenges that face both small food producers and their would-be customers. Salatin does tend to stray off topic though, and he’s not always consistent. For instance, he argues for a consumption tax rather than an income tax, but wants to abolish the consumption tax on gasoline, presumably because that hits him personally. He proposes that the government should not fund agricultural research at state universities, overlooking the point that if government research funds were not available, than ALL agricultural research would be beholden to the industrial producers that would provide the sole source of funding. In general, though, the book contains some important ideas that consumers and farmers alike should become aware of.

I finally decided that I was going to make it happen. I had lost too much time becoming complacent, and drugging myself to live. So I went to a centre, and did it. It was difficult; there were lots of vitamins involved, and I didn’t like sauna’s (although I love them now) and it took me 28 days, as I had a history of X-Rays, Dental Work, Surgeries, sunburns/radiation exposure. While I was on it, and afterwards though, the results were unbelievable.

  I have owned this book for about two years, and I use it frequently. The recipes are simple, normal, and mostly delicious. I would recommend it to anyone – Celiac or not. My husband was diagnosed with Celiac three-years ago. Prior to that, I considered myself a gourmet cook. Our whole house went gluten free, and the first year had many disasterous results. After cooking everything gluten-free for three years, I can now, again, cliam to be a very good cook.

  I have a huge library of gluten-free cookbooks – some very good, many not so good. A huge complaint of mine is that most are high in fat, in order to replace the gluten (Some even tell you to not reduce the fat called for in a recipe.) The Reduced Calorie Cookbook has found a way to incorporate taste, and remove a lot of the fat. My thanks to you for a job well done.

  I should also note that an important addition to the recipes are the nutrition values. Being concerned about healthy eating, this is a must for me that lacks in most gluten-free cookbooks. BRAVO

  In my opinion, it is a must to try. I promise you won’t be disappointed. Eating gluten-free doesn’t have to be eating taste-free.
