Unfortunately, I had to read this voluminous book in translation, which somewhat slowed down the process of reading it. It could be said to be almost the definitve work on fats and oils – the only thing is the book’s a bit old (from 1993), so it presumably won’t contain the newest information in this field.

It is not only a comprehensive work but an extremely ambitious one, in that Erasmus doesn’t restrict himself to discussing fats and oils but includes healthy eating as a whole. I found it to contain valuable information. The author is a wise and knowledgeable man.

He goes into absolute detail about the structure of the various oils, and these sections don’t make for easy reading for those like myself who are scientifically illiterate.

Some basic details I retrieved from the book are as follows:

1) The essential fatty acids are lineolic acid (LA – omega 6 – and alpha linolenic acid (LNA) – omega 3.

2) Flax oil is the one containing most LNA (omega 3), and supplements of this oil can thus quickly resolve a lack of omega 3, but if one solely consumes flax oil then in the long run symptoms of lack of omega 6 will occur, since flax oil contains 4 times as much omega 3 than omega 6. The ideal ratio of omega 3 to omega 6 is 1:3, and hemp oil has this ratio between the two omega types. However, hemp oil is quite expensive.

3) It is of the utmost importance that we use only the very best oils that have been pressed and packed in darkness in an oxygen-free environment. They should be packed in dark containers and marked with sell-by date.

4) He points out the dangers of reducing one’s cholesterol level too much (suicide, cancer), and in fact devotes a whole chapter to questioning the accepted cholesterol theory. (See also “Fat and cholesterol are good for you” by Uffe Ravnskov and “The great cholesterol con” by Malcolm Kendrick.)

5) All margarine and fried food should be avoided. If you absolutely must fry something, use, for example, a little butter. Oils containing essential fatty acids must never be used for frying. When frying in oil, water added to the pan keeps the temperature down to 100 degrees, which temperature is not destructive. Trans fatty acids are dangerous and should be avoided.

6) Erasmus subscribes to Nobel Prize winner Linus Pauling’s views that coronary disease is first and foremost due to a lack of C-vitamin.

He devotes a few final chapters to discussing the nature of health, and suggests that doctors should be focusing on this and not on disease.

This book contains an absolute wealth of essential health information, and I have only given a very few pointers.

I would highly recommend this book to those at all interested in their health. There could be more recently written books available that are equally good, but I don’t know of any. My attention has recently been drawn to the fact that the author fails to mention the excellent qualities of coconut oil.

This review is of the fourth edition of THE REAL VITAMIN AND MINERAL BOOK, 2007. There are lots of books in the market about vitamin and mineral supplementation but this one makes a better case than most that Americans, on the whole, should be taking a lot more vitamin and mineral supplements. For one thing, says author/researcher Shari Lieberman, the FDA’s RDI’s (until recently RDA’s) are defensive measures designed to guard against certain diseases but not to enhance health. For instance, the suggested amount of B vitamins we need are calculated to keep beriberi, rickets and pellagra at bay, when many other health benefits accrue by taking more of these substances. For another, those usually minuscule RDI amounts are calculated for an imaginary genderless human being of about 160 lbs, truly a statistical straw person. Worse yet, the quality of the food we Americans eat is steadily eroding under the impact of over-processing, fast food, and soils weakened by generations of chemical (nitrogen-based) fertilizers.

So basically the author dispenses with the “common wisdom” along the lines of “Eat a good balanced diet every day and if you like, take a multivitamin-mineral supplement.” Lieberman patiently discusses the role of every vitamin of human use and most of the minerals. This book held a lot of surprises for me. Did you know that Niacin (Vitamin B3) can help lower blood cholesterol? It is even called the “best-kept secret in American medicine,” especially when so many people are taking vastly more expensive statins to lower their LDL’s. (Many people take both Niacin and statins, and shrug and smile when the doctor credits only the precription drug for any improvement in blood cholesterol.) And men — before you go to the doctor with complaints of a swollen prostate gland (which may be “BPH”, benign prostate hypoplagia), try getting more zinc into your diet.

What I like most about THE REAL VITAMIN AND MINERAL BOOK is its intellectually honesty. Lieberman backs up her advocacy by discussing the most recent and relevant studies of vitamins and minerals. Usually her suggested doses of vitamins and minerals are many times the government’s straw-man RDI amounts, but really you have to read this book. Someimes the amounts of supplementation for a particular substance is about the same or a little more than the government recommends; and in at least one case I can think of (phosphorus), she recommends no supplementation at all; i.e., nothing compared to the FDA’s RDI of a small dose.

So the reader has to pay attention — gorging on multivitamins, B-complex vitamins and fish oil may do us more harm than good. Also, frequently, the form in which a nutrient gets to us is key. To help reduce cholesterol Vitamin B3 (Niacin) has shown to be helpful, but it needs to be taken in the form of “straight” Niacin, not the Niacinamide that usually winds up in multivitamin or B-complex pills. But ingesting the straight Niacin can lead to a flushing effect — to counter that, it is necessary to take an aspirin half an hour before taking the straight Niacin (an easy habit for those of us who practice “daily vitamin therapy” of a small aspirin tablet each morning), OR to pay extra for “flush-free” Niacin. This book is packed with such helpful strategies and approaches, which make good common sense and are based on scientific data.

In fact, THE REAL VITAMIN AND MINERAL GUIDE has quickly become my “go-to” book about the benefits of the various nutrients discussed in them (there are also a few herbals the author discusses and approves of). If the recommendations in this book continue to work for me as well as they have for the past several months of implementation, it may well become my “bible” of greater health. Highly recommended. This book has a history of slipping in and out of print, so don’t be afraid to go for a good used copy as long as it is fairly recent.
